The news is full of stories about rising cacao prices, future cacao shortages and the efforts underway to address these issues. The majority of the emphasis is on making cacao more disease resistant and increasing the yield. These are all wonderful efforts, but...what's going on to preserve fine flavor? How will we preserve the amazing and outstanding cacao enjoyed by chocolate aficionados, produced by artisan chocolate makers and used by pastry chefs and chocolatiers today?
Join us on Saturday July 9th in Washington D.C. for a panel discussion (USDA ARS, WCF, and others) and update on efforts underway that focus on identifying, protecting, and promoting Fine Flavor beans. The event also includes a chocolate tasting hosted by FCIA member, restaurateur, and author Maricel Presilla, and a Gallery Showcase where companies supporting fine chocolate professionals can promote their products/services.
