SEATTLE, WA—MDP Signature Chocolates (http://mdpchocolates.com) owned and operated by Chef Michael D. Poole will be exhibiting and selling its award winning, artisan chocolates and toffee at the Northwest Chocolate Festival (http://nwchocolate.com) at the Washington State Convention Center at the corner of Pike and 8th Avenue in downtown Seattle, from 9:30 a.m. to 6:00 p.m. on Saturday, September 29 and Sunday, September 30. Festival admission for one day is $30 at the door. Festival Two-Day Pass is $60 at the door. The private press night is Friday, September 28.

Chef Poole will also be debuting a new line of chocolates, “Hot Chocolat,” (http://hotchocolat.net) which will feature three new flavors: habanero caramel enrobed in dark chocolate, cayenne caramel enrobed in dark chocolate, and firehouse chili enrobed in dark chocolate. Chef Poole offers more than 15 flavors in dark, milk, and white chocolate made from the freshest ingredients. There are no emulsifiers, additives, or preservatives in the chocolates. Three flavors of toffee will also be available. Retail buyers and individuals are invited to stop by and sample and purchase the chocolates and toffees.

In 2004, Seattle firefighter and chef Poole established MDP Signature Chocolates and began producing handcrafted, French chocolates under this label. These chocolates were provided exclusively to catering clients. With an increase in client demand, chef Poole began boxing the chocolates for retail sale on the Internet.

Since 2004, MDP Signature Chocolates has won silver and gold awards at both the Seattle and San Francisco International Chocolate Salons. MDP Signature Chocolates earned “Master” chocolatier status at the 2012 International Luxury Chocolate Salon. The judges at the 2011 Seattle Chocolate Salon proclaimed, “the lemon meringue truffle from MDP was like a bite of lemon meringue pie enrobed in white chocolate.”

 Chocolatier and chef Michael D. Poole has served 32 years as a firefighter, lieutenant, and firehouse cook on the Seattle fire department in Seattle, Washington. Chef Michael is a graduate of Le Cordon Bleu Paris with a Grande Diplôme in Pastry and cuisine.
