Following a 2010 sold out event, Taza Chocolate of Somerville, MA and Cotton Tree Lodge are pairing up again to offer a unique Chocolate Week in Belize, March 19 - 26, 2011.
The week’s activities, led by Taza staff, will be centered on the history and cultivation of cacao, and its transformation into craft chocolate. The climate of Southern Belize has proven just right for farming Theobroma cacao, on account its tropical lowland climate. And Cotton Tree Lodge is the ideal base from which to explore chocolate in all its facets.
Highlights of the week include:
-Visit a Mayan owned organic cacao farm, pick pods, and learn to make a traditional chocolate drink
-Learn about the fermentation process, and begin your own fermentation
-Presentations by Taza staff on sourcing cacao in modern times, and the ancient origins of chocolate making
-Learn to make your own chocolate from scratch at the Cotton Tree Chocolate factory in Belize. Take home bars you made!
