 onal program explores the work being done to preserve the flavor profi
 le of rarer cocoa genome types before the beans get into the hands of 
 the chocolate maker. Taste a rare sample and evaluate how this scienti
 fic work could impact its flavor.\n\nThe event also includes a session
  on extending shelf life for fine chocolate truffles and confections (
 Members-Only Session). Network with other industry peers, learn about 
 new products & trends in the Gallery Showcase, and party with other pa
 ssionate chocolate professionals!\n\nREGISTRATION\nRegistration for FC
 IA members is $30 (USD).\nRegistration for Non members is $100 (USD).\
