As at Valrhona's infamous L'ecole du Grand Chocolat school in France, chefs, instructors, and chocolatiers attending Valrhona En Route’s classes will find a vibrant and welcoming venue where they can exchange ideas and share their high-level of expertise with one another. They will also learn to perfect their techniques and discover current and new trends under the guidance of L’Ecole-trained chef-instructors.

Chef Derek Poirier will share insights and effective techniques on the use of ingredients and balance of taste, control of blending, assembly and plating. Discover the keys to perfect and consistent textures. Acquire a deep understanding of the role and impact of ingredients in creating winning recipes and profitable desserts. As part of a small group of 12 professional pastry chefs, you will work on different recipes and presentations.
