Cacao Fementado or without fermentation, which do you prefer?Discussion Title

chocolate market has evolved and there are different trends, the question is A chocolate should be made with well fermented cacao criollo? Criollo cocoa or Ferment? who work in production and postharvest have concerns, many now prefer cacao chocolates with low fermentation, in the case of Nibs, while in the liquor fermented cacao cacao prefer .. we are open to hearing comments.
