I am starting a new chocolate company and am looking for some guidance on heating cabinets.  Does anyone know any alternatives to the ultra expensive "made for chocolate" versions?

Would a regular hot food holding cabinet work if I can manipulate temperature and humidity?  What is the best humidity for holding chocolate?

I use a bread proofing cabinet and just don't turn on the humidity.  Works great!
