Can anyone tell me what the minnimum amount of chocolate I should use in a 6kg melter?

Permalink Reply by Daniela Vasquez on November 28, 2012 at 5:38pm I'm having somewhat the same issue. I temper my chocolate by hand in the marble. But I'm having trouble lowering its temp because of the amount of chocolate :( plus the weather won't help me, it's so frustrating
