I'm looking for something just like the TGP3 except with humidity control, so I can display the chocolate truffles on the marble (with a sneeze guard, of course) and then store extra truffles in the temperature controlled fridge. My business partner is really against confectionary cases based on their aesthetics (or lack thereof). Has anyone developed something like this or have you tested it with the Johnson Controls device since you posted this?
These specific machines are no longer available. In fact, I don't know anyone making a lowboy unit specifically for storing confectionery (i.e., units with humidity control). Irinox may still be making one but they are not exporting to the US.
You could try this unit from Panimatic:
it is available with a granite countertop.
I can't tell about temp and humidity, but it is advertised for working with chocolate so I would imagine it being in the correct ranges.
