The 2010 Hawaii State-wide Cacao Variety Trial

Cooperators from several islands will be involved. In addition there are over 30 cacao growers in the state and more waiting to plant.

This group serves as a central point for information and discussion on a variety of topics from propagation to fermentation to tempering in the tropics.

The goal is to create a forum that will maximize quality English language content benefitting our Hawaii growers and chocolatiers and other Chocolate Life members as well.

Hey everyone,
I joined 'thechocolatelife' just a few days ago. I started with a 2 years during course of making pralines. After looking for recipes on the internet I came across this site. Lots and lots of information on here... I have been to Hawaii a while ago and we loved it so much, that now I still think every day of our trip. If I ever have the chanse to move to one of the Isles I will go!! What I didn't know when we were there, is that Oahu also had cacao farms. Another reason to go back :o), same as the hundreds of other reasons I have to go back. Just like in the tv series Lost my mind keeps saying, "I have to go back to the Island"... I hope I could make some friends with same interests here on the website...

I have been to Hawaii twice, and as much as I love chocolate, I didn't think about visiting Cacao farms. Being that I am a Polynesian dance instructor, whenever I visit Hawaii, my time has always been consumed with advance dance lessons and luaus. Now that I know, I will make a point to visit the Cacao farms of Hawaii.

I work in Skip Bittenbender's lab at University of Hawai'i Manoa from time to time so could introduce you to him and Dan who are doing the variety trial there.

I'm considering surprising my wife with a trip to Hawaii this spring as a present to celebrate an accomplishment of hers. If there's anyone needing technical help with their cocoa/chocolate endeavors, and end up being in the area where we are, drop me a mail here. I'm always game to lend a hand.

My experience with the Hawaiian beans is that they are very fatty and there is no need to add extra cocoa butter. Original Hawaiian does not have a press. It is not a complex machine, like everything else it just cost some $$. www.konagold.com has vanilla beans for a reasonable price. Maui produces sugar-both the C&H brand and the raw washed sugar. We get one in the store too thats finer than the raw but is tinted so its still cane sugar.

I know C&H sugar still produces Hawaii sugar- I cant say it's 100% Hawaiian, I know there's several vanilla small time vanilla producers, along the with famous one in Hamakua-but Cocoa Butter - that was the tough one.
is it a big deal to press cacao to remove the butter or is it just a matter of pressure-as in- not a big complex machine-

Seems like they've been doing it for a couple hundred years- couldnt be that complex....right?

I just checked the website for the Original Hawaiian Chocolate Factory. No mention that they're producing cocoa butter on site, and it's not listed in their products for sale. Would be interesting to know if they're pressing it there. I make chocolate from cacao that is 100% Hawaiian, but don't state that it's 100% Hawaiian chocolate, as I don't have cocoa butter, sugar or vanilla from Hawaii to put in it.

I don't think anyone here has a press to extract coca butter
