So let's say your transitioning from home equipment, but don't the extra cash to increase too much capacity. Does anyone have recommendations on something in between home use machines, and a Delta Tempering machine costing upwards of $2,500?  I'd like to see if there's something reliable for this in between step. Anything under $1000?

I'd love to hear that such options exist, but I do not think they do. If you are looking for tempering machines, except for some rare find of used equipment from a distressed seller, you won't find inexpensive machines. You might get a reasonable deal on a used Mol d' Art that maintains temperature, but you have to actually do the tempering -- the machine just maintains temperature.  Used Chocovision X3210s that take 10 lbs (or more if you use their "holey" baffle) are sometimes sold in the $1500 range.  Chocovision occasionally has refurbished ones, but they are closer to $1700.   Good luck.  I'm sure many others hope there are options!

When you say "home equipment" what do you mean exactly? do you have a small tempering machine like the chocovision Rev I or II? small but better then a baine marie and smaller then the 3210. If you for see really getting into it more go for the X3210, it's worth it and not huge investment. you can always go for the melter as mentioned just takes a little more practice getting the right crystallization.

It depends on how much volume you are planning on doing. The Rev 1 can temper about 1 pound of chocolate at a time and takes about 20 minutes to run through the cycle so if you only need to do a few pounds at a time this is a good option and only costs around $500.

The company even sells refurbished machines so you may be able to pick up a less expensive one.

I have an ACMC temperer w/ an extra bowl for ease of changing out different chocolate. It's only been used around 25 hours. It's 2 yrs old. Bought it for 800 + 30 for the bowl I'm selling it for 600  you pay shipping.

Hey Mike! Do you still have the ACMC Tempering machine available? I was wondering why you're trying to sell it after only using it for a short while? What's your take on the machine? I need to get a temperer, but am quite torn on which one to get...
