Hi,


I am looking for an easy white chocolate recipe.  I have dairy allergies and really miss the taste of white chocolate. I know it's possible, just sugar and cocoa butter but can't seem to get it right.  Any tips or recipes that would be great!

Try a mixture of water, guar gum and xanthan gum (the gums will act as an emulsifier). heat to about 200 deg. add sugar and vanilla to this mixture. Bring back up to about 200 degrees then add the cocoa butter. You'll have to figure out the proportions to satisfy your tastes. As for the gums you don't need much for 2C water you'd use about 1/4 tsp of each. Additionally you could add a bit of coconut cream for some added richness and a bit of salt.
