Hi Everyone! I'm fairly new here and to chocolate making. I started selling my handmade organic raw cacao chocolates at farmers markets this year. I am doing a little talk/tasting this weekend in our very small country town and was hoping people here might share a bit of an outline on what to do!! I thought I'd start with showing people what a cacao fruit acutally looks like! ha! Then a bit about how good dark chocolate is made and then what to look for in a piece of quality chocolate. Any other suggestions on how to a a little spice to the talk would be well apprecieate from this novice.

My tree-to-bar cacao farm and factory is located in Costa Rica. Any cocolate lovers who want to travel and get in depth experience with the whole process are welcome to visit us! We have amazing lodging with ocean views of the whole Caribbean coast and our chocolate is made right next door. Chocolate lovers and chocoláte professionals will love staying with us.

If there is a National Chocolate Day, I vote that it should be in January or February, when the rains fall in the south, cacao fruit ripens, and the cold snowy northerners eat chocolate and make love to stay warm.

Hi all.  Looking forward to getting threads.  I am a professor of biology at a small liberal arts college and teach an interdisciplinary course on chocolate.  Always looking for new information on chocolate and resources to use in class. I would love to go on a chocolate adventure one of these days.

Hi all I am a chocolatier I have studied chocolate & patisserie for 3 1/2 years at William Angliss Institute melbourne australia. i have worked in the industry for about 4 years I seeking advice on how to become a " master " does anybody know what the criteria is, to be called a "master chocolatier"
I would like to know if anyone knows what i would have to do to become a master
& where i could go to study.

Well, If anyone is interested in going to Ambanja and the Sambriano Valley in Madagascar..... then you need to drop me a line. Its well worth the travel. We are planning a trip in June 2011 and we will do everything. Farmers, Suppliers, Co ops, Island Holiday for a few days........... It'll be great!

I recently became a member of Chocolate Life & of this group & excited about all it has to offer. I've already found there to be a wealth of information & am thrilled to find myself amongst so much talent & knowledge.

I currently happen to be entirely immersed in eating, thinking & sleeping chocolate as I've been organizing a chocolate tasting fundraiser in NYC. Its the first of such events I've put together, & I would love any last minute words of advice since its this Friday!

I would also like to invite any & all of you who are in & around NYC to attend. It is a fundraiser for the Haiti relief efforts of Doctors without Borders, held at the Isack Kousnsky Gallery, February 19th at 7:30pm. 561 Broadway, Loft 4B.
