Are we meeting at the Fancy Food Show to talk chocolate?

I have sent 3 bars of "Corazon del Ecuador" 72% and 3 development bars of "Heart of Brazil" 70% for the next Wonk meeting. The Brazil bars are so new I don't have wrappers yet. They were made using fellow The Chocolate Life member Jim Lucas' beans and I took samples to my launch at the London Real Food Festival last weekend. Comments on the Brazil:
1. Warm, chocolatey, coffee at first, slightly burnt aftertaste. Some mould.

2. Fruity, nice grassiness, fresh.

3. Very fruity, would use as a couverture with the cocoa butter reduced.

Comments on the Corazon del Ecuador:
1. TheChocolateReview site said: a "safe" bar. Slight cherry and marzipan.
2. Martin at seventypercent.com said: treacle toffee, over-ripe banana, mulled wine, gentle citrus, raisins and powdered ginger. Tannic aftertaste like black tea.

Looking forwards to hearing your thoughts!

Thank you Clay, I very informative wonk meeting, the science behind the joy of chocolate is inspiring. Thank you for listing the samples we had, it helps to know what they are so we may buy them. It would help if the room was better lite.

I'd like to donate some Holy Cacao Chocolate to this event for sampling. I won't be there but I would love to contribute to the event and get some feedback on our chocolates.

The subject for the April 25th Chocolate Wonk has been decided - it's all about rating and reviewing. Different approaches, how to do it, what's important to try to convey - and more. Of course, we'll be doing demonstrating using actual different chocolates so I can't imagine a tastier class anywhere.

The next Wonk is scheduled for April 25th. Subject TBD. Sorry for no March Wonk, my travel schedule and lack of access to e-mail meant that I was unable to secure a date.
