Chocolate making is not that easy. Its an expensive artwork. Specially in regions like India. For best results I would recommend you to work in a room with A.C on

thanks sanjay.I am not using a brush on these chocolates what i do is fill my mould with chocolate let it stand for 5 mins then empty the mould by then a wall is set then i fill this with ganache and let that cool for a bit and then top it with chocolate leave it to set on the counter for an hour and then un mould it. idont refrigerate them because the i have sweating problem of the chocolate .u think is there a better way that i could use to make soft centered chocolates if yes let me know

Nadia, the side walls are too thin, that is why they are cracking. I am sure the filling is also leaking out of the cracks? You have to use a special brush to make sure that the thickness of the chocolate is sufficient on the sides.

hi can any one help me on this.I made soft centered chocolates in a polycarbonate mould but around 50% of them cracked while taking them out of the mould any ideas as to where i could be going wrong

hi balpreet singh .Custom mould i think would be out of my bracket.but if the printer and edible ink are like one time investment with good quality of print on chocolates i wouldnt mind doing this investment.Could u help me as to where i can find this i am situated in mumbai.

Hi nadia. Edible ink and printers are available in india but they are expensive around 25000/- and yes plastic moulds are available with messages already printed.
For custom moulds the minimum rate is around 5K - 18K depending on the material used.

@Nadia: The pleasure is mine. Could you please give me some to evaluate the Indian market and what is available? One option is for ordering customized molds, however, they are quite expensive. If you want, I can inquire the prices. However, you'll have to provide me with some chocolates as well. ;-)

Thanks mr sett for ur time . I tried the pre-printed sheets but one theny didnt transfer well on the chocolates i mean the print where grainy and the other think i keep getting request for chocolates with not just printed messages like happy birthday or anniversary but people want it more customised like the birthdate on the chocolates or their names how do i go about doing that?

Hi Nadia, I am not sure whether special printers required for the task are available on the local market. However, you can purchase ready-to-use messages. Edible inks are available in India, but they are extremely costly. If required, please befriend me (optional) and I'll help you.

hi 

I am a chocolate enthusiast from mumbai . I love to eat truffles and make hand dipped ones for family and friends.but lately i have bought a magnetic mould for better finish for truffes but i want to customised it messages or logos how to i do that .There are solutions on the internet but  

mainly from websites based in uk how do i customise my chocolates with what is available in indian markets .Like where to find edible inks and printers that do not clog with cocobutter etc any help for indian chocolatiers will be appreciated
