Gala dinner amuse
This is the amuse bouche at the gala dinner on Wednesday evening. It's a duck liver mouse coated in a cranberry cocoa gelee with an apricot confit and assorted baby lettuces. The dinner was held at the Park Hotel Vitznau right on lake Luzern.
