This picture is of Mary's Chocolates from Tokyo. Each year they dedicate a section of their booth to demonstrating how they decorate their chocolates. The flowers on the pieces on the left have been piped by hand. They put the colored chocolate (in the bowl in the center) into tiny cornets made of parchment paper.
