Shelling Roasted Cocoa
When I was in Belize April 2007 I was with a group that visited Cyrilla Cho, a Mayan woman who makes chocolate using a mix of old and modern techniques. Here the group is winnowing beans that were roasted over a comal, a traditional stove.
