I will try to explain:

Gourmet cocoa beans, as shown above, cannot have germination signs, mildew, smoke, violet, slate or be insect damaged. This indicates seeds from fruits with diseases, and, also, low quality process in the farm, as fermentation and drying. First Grade, gourmet cocoa beans means that only the good, healthy beans are carefully selected and the unhealthy ones discarded. Unfortunately very few farmers bother to do this selection.
Who is capable to produce high quality chocolate starting from unhealthy and badly beans as shown in the low part of the picture?
For who wants, I have a power point file that shows as our gourmet cocoa beans and cocoa nibs are produced.
