Clay, the paste and the nibs I am selling are from Baures cacao islands and are not necessarily a mix.   Rather a single orgin strictly from Baures, but again that is why we call it a criolla cacao.  I was  at the 2011 cacao rueda de negocios in La Paz and tasted many of the beans  from the different grower associationsfrom the Palos Blancos Nor Yungas area  that sell their hybred organic cacao to CEBO.   The cacao I am offering is a true wild harvested cacao. 

I was  not at the 2010 cacao fino conference but appreciate your efforts to improve the quality and appreciation for Bolivian cacao.  What was the subject you spoke on and how do I get a copy?

Jorge - Thanks for the kind words. I've been to Baures, Hucaraje, and Bella Vista, so I know the area. This is made from a mix of the wild-harvested varieties that are in the area? I know that I was able to see at least four or five sub-varieties of the cacao beniano as some are calling it since the cacao fino conference in November 2010 in La Paz. Were you there? I spoke.

Hi Clay, thanks for the comment.  This is Criolla as in native cacao single orgin from Baures,Bolivia.  Regarding specific genotype that the beans are,  is a much heated  discussion and like you mention, should be cleared up with testing.  I do plan on having the beans tested to further describe them but that will have to be in the near future, possibly for the 2012 harvest season.    I appreciate your comments and many of the discussions I have seen here in The Chocolate Life.

Criolla? (Native?) or Criollo - as in the bean "type"? If the latter how are you able to make this claim. Did you get the beans tested to know what they are?
