Comment by Thomas Forbes on July 28, 2012 at 12:14pm This is the traditional method of preparing chocolate for drinking. The beans are roasted over wood, cracked in the pilon, winnowed by hand, and then put the nibs back in the pilon and turn it into paste. Most of the balls I buy are unfermented Sanchez, like the ones in this picture. These had a very nice floral aroma and makes a very nice hot chocolate. They sell for RD$25 for a four ounce ball, mas o menos. That is about US$.64 each.
