Another Friis-Holm pairing, Mikkel takes the same base chocolate and offers both a 65% dark-milk and a 55% dark-milk. Again, the results are profoundly different, with the 55% possessing far more milk/caramel flavor than the 65% while also (not surprisingly) being much sweeter. Mikkel also had a sample of the base chocolate for the 65% bar before milk was added. The Danes are doing some wonderfully creative work.
