Many people know the important role that Trinidad plays in the history of chocolate, but many fewer people know that cocoa is also grown on the island of Tobago. Duane Dove has been rehabilitating an estate there and the relatively small production is converted into chocolate by François Pralus. Definitely an effort with supporting and a chocolate worth eating.
