Hi Evert-Jan. In English: you have asked what they want to achieve with this, or is it just marketing. I don't think it's marketing. I think Friis Holm was curious what happened with the tasting profile if you turn the beans two or three times during fermentation (at least I would be). You have to taste it yourself! The difference is huge! You can buy them at Chocolátl in Amsterdam.
