Tom says: Fermented beans are typically covered in a greyish/whitish material. Non-fermented beans look a bit like whole, unskinned almonds, richly brown. Beans that make the best chocolate tend to look ugly while the unfermented ones look pretty. Many natural foods stores sell "raw cocoa" which is unfermented and has virtually no flavor. Fermentation leads to a cooking of the bean that kills it.

hello eve, how do u know from the outer look of the cocoa beans that it is a fermented quality cocoa beans. Rgds/Vilas
