Claudio Corallo makes amazing chocolate. He grows cacao and makes chocolate himself. On a recent trip to Berkeley, I chanced upon Alegio chocolates along Shattuck and discovered that he supplies cacao to one of my favorite chocolatiers - Enric Rovira of Spain. Claudio is a name to watch out for.
