There is no way that I want to employ to make the truffles shelf life longer then a few weeks. It's just not natural. One of the challenges and ephemeral aspects of working with fresh ganache is the limited shelf life. A with most perishable products, the fresher it is, the better it is.

I blend my chocolate so the cacao is about 72%.

Is there a way to keep those shelless truffles more than few weeks? In fact I'm asking about the shelf life.

Your truffles make me calm and remind me of real chocolates. It seems like you use >80% cacao.

Among the hard shell American-Style chocolates your chocolates stand out. It speaks for itself. Keep going with good work.

I top my coconut truffle with toasted shredded coconut and my bittersweet nib truffle with roasted cacao nibs. I reroast them via dry-pan saute to bring out the nutty flavor of the nib. For that reason, that one has become my favorite lately!
I'm glad you feel like reaching out and grabbing one. Our photographer LOVES revealing rich texture. We went to great lengths to create that visual feeling ;) .

On the square I see orange near the nibs? and the other square had white and orange flakes! Is this coconut and peels or something? I feel like reaching out and takaing them both!!!! Simple and classy looking!!
