Hello Sarah, its a fine chocolate to make chocolatemousse and for bonbons.
example: Light mousse Macaé 62%
250g milk
500g cream with a fat content of 35%
340g Macaé
4g gelatine
as simple a that...
PS no sugar, only the sweet taste of the chocolate
