I used to use white sugar and sorghum syrup, now I use organic cane with sorghum syrup and brown rice syrup. The pieces are stable for a couple of days, then begin to crystalize. Suggestions?  Is it…Continue

"I can't speak to the mixture of sorghum and brown rice, but cane sugar tends to have larger granules the processed white sugar. Makensurenyou cook your caramel as low and slow as possible and wipe down the edges of the pot often with a wet…"

"I got the same Tulsa request. I guess that one is going around. I asked for money for the samples and if she did order the cost would be applied as a credit. She stopped emailing me."

"What a coincidence. I just got the Tulsa email last week. I've really scaled back my mail order, especially for large volumes. (Since I'm trying to be as "sustainable" as possible, given the product, I often encourage people to…"

Recent retail scams I've had...

My shop is smallish, but I've had a few fraudulent attempts, I wonder about everyone else's experiences.  First guy... Emailed "My daughter's birthday chocolates", I sent him a quote for a little over $1200 worth of chocolate.  All seemed well as we emailed back and forth regarding the details.  He claimed to be travelling out of the country, tight schedule etc.  I have many customers like that. The wierdness started with payment.  Of course.  He wanted to send a credit card number and charge…See More

"I also take offense at this new term "re-melter". Many of us are artisans and it is all about beauty and flavor delivery. Frankly, I have yet to find a good "bean to bar" chocolate that was very palatable. No, I have not had…"

Most memorable chocolate experience:
The first good temper was pretty cool, but nothing beats the feeling I had after the first sale. I made hand pressed roses mounted on chocolate heart bases. Sold about $75 wholesale to a local shop, she returned about 1/2 of it 6 weeks later. I didn't care, I was nearly in business!
My favorite chocolate is:
Callebaut, Belcolade
