Absence of Chocolate....Not!

 Absence of chocolate is just not happening, just my absence while making some real transitions in my life, mostly that of moving part-time to Ecuador related not to cacao, but coffee....and cacao. Now that may seem strange as a combination, but I have long had a passion for coffee and have developed one for dark chocolate as well, knowing the health benefits offered from this incredible food. Most memorable chocolate experience:
While living in Quito, Ecuador, I was introduced to many interesting foods I had never eaten before, and some that were presented and prepared differently than back home.

Ecuador, known for Cacao exports, boasts some pretty incredible chocolate. On a cool, rainy day my wife and I were taking time to enjoy one of the local bakeries that also offered a small cafe. Thinking this was a great opportunity to enjoy some hot chocolate with a pastry we sat down and ordered.

The pastry was beautiful, well made and decorated, but as usual the look never measured up to the taste. However, the real surprise was the hot chocolate. As I stirred my cup, I noticed there seemed to be something at the bottom that was thick and not dissolving very well. I decided to just go ahead and drink and continue to stir.

What a surprise, as I was exposed to a new flavor with hot chocolate never before experienced or tasted.

A piece of Swiss cheese had been added to this age old concoction, and I have to say the flavor was unique and delicious!

I love making this at home now, but it just never seems to taste the same.
