" I have the Sinsation. It melts and tempers about 1.5 lbs. of chocolate at a time. After about 30-40 minutes I find that I need to melt a small amount of chocolate and re temper the batch because it becomes over-tempered, becoming too thick to…"

"Hi Clay. I actually did contact Chocovision and based on what I told them the thingy that warms the machine is kaput! So I am sending the machine for them to fix it. Thank you, Clay. It is nice to be back in the chocolate-making mood. I hope you…"

"Andre - You've done all the right things, except I would call Chocovision and see what they can do for you. There are some electronics in your Rev 1 and it's possible, after a long period of inactivity, that something worked the first time…"

Rev1 Problems - won´t melt!

Good morning, everyone. I hope you are all well.I had not used my Rev 1 in a couple of years. Last Saturday I took it out and made a few batches of molded chocolate and the machine worked perfectly. This Saturday it did not! Everything did what they were supposed to do, but the temperature did not kick in and the machine did not melt the chocolate - so, no tempering. The bowl was spinning, all the lights were on...everything looked fine, just the temperature wasn´t working. I unplugged the…See More

Chocolate Training Shopping Spree

Posted on June 2, 2009 at 11:24pm 2 Comments

After ruminating over and over on what to do next - I have not done much, so any step I take will be a step forward - I decided to take more classes; although I am taking a class at the moment, the nature of it being online does not keep me motivated enough. I need to be there, working the chocolate, networking with other people, in a more conducive atmosphere. The whole online thing is actually a little boring! I am from another era, albeit computer savvy!

Anyway, so today I visited… Continue

What I've Done So Far

Posted on May 31, 2009 at 11:29am 0 Comments

Eve asked me whether I've taken any training so far. I have. One! And there is another one going on now.

The first class I took was a one week, 25 hour introduction to chocolate making at ICE (the Institute of Culinary Education) in New York City, where I live.

One aspect I enjoyed about that class is the fact that due to internal reasons, the institute had 3 different chefs training us over the 5 day period. That gave us all a good perspective on their personal approach to… Continue

The Beginning of my Journey

Posted on May 29, 2009 at 11:54am 1 Comment

First of all, thanks Eve for giving me the kick in the behind I needed to start blogging about my own journey! I needed it. Seeing the photos of what's to become your store made me realize how much I want to go through the same process. I want it! And that's a huge statement if you only knew me!

So, before I start, let me give you all a short background on myself.

I am Brazilian, but I've lived in New York City since 2001. I just turned 41 this past May and, so far, I've never… Continue
