I am almost done ready Elaine's book and I was looking online to see if she had written another. I create party cakes (check out carlaspartycakes.com) and I am always looking for more creative ideas. I molded my first molds this week --shells to go with a sandcastle cake I making next week. I had never tempered chocolate--boy it is time consuming. But they turned out great!
Today, I made chocolate clay--to try out those flowers. I'll let you know later how they turned out.
I have always wanted to own my own candy shop. I grew up in a candy-making family, but was never taught how to make candy (call me sometime and I'll tell you about it).
Your book doesn't give you any advice on how to make your own caramel. I'm anxious to try out almond turtles, since I don't like pecans. Any good recipes. I don't want to buy a premade caramel like your book suggests.
Thanks for the advice,
