Its a lot easier to temper and easier to teach my staff with. I just love the first caramel taste of a really good milk chocolate.
What types of Chocolate or should I say brands do you use in Puerto Rico, anything not as easily available in the US. I am on a search for rare chocolates to have some fun with.
