Most memorable chocolate experience:
Oh my goodness ... I will die before anyone pries my chocolate secrets from my very long memory. Aside from that, I am the founder and owner of Trifles, www.triflescakes.com which is a chocolate and pastry boutique (we've added a coffee shop at another location) and Home Chocolate Party, www.homechocolateparty.com which is a lifestyle group dedicated to educating, selling and entertaining people with gourmet chocolate and all accoutrements.
My favorite chocolate is:
Cluizel

Trifles' Chocolate Smash Cakes

Check out this fun way to celebrate! A child takes a hammer or mallet to pummel a customized chocolate structure, which is then served to guests. The hollow chocolate smash cake can be filled with treats (chocolate covered strawberries are in the hockey themed cake).

The Realities of Food Criticism

Detroit photo courtesy of Stephen Boyle www.313fad.com

Anthony Bourdain just finished filming in the Detroit area. He has valuable things to say regarding food and the criticim of food which is philosophically aligned with my point of view, as previously expressed on The Chocolat… Continue

Lest we Forget

Happy New Year to all as we ponder what 2009 will bring to our choco-planet. A discussion of Jellies in this forum has led me to yet another whimsical reverie of childhood sweets. One of the most intoxicating and mouth-watering sweets I enjoyed as a child was Turkish Paste. Every C… Continue

Understanding Markets for Gourmet Chocolate

Now this IS personal. Once again, the fire lights in my belly when my beloved regional Detroit, French for "the straits" is viewed by fellow countrymen as a crass bulldozer of a city, known for belching smoke and grinding wheels. While it is true that our region was a giant in the industrial revolution, it is also true that Michigan still wields great economic & industrial power. If one reads economic reports, such as the one you will find here: http://www.oakgov.com/peds/assets/docs/… Continue

I would have to say Mackinac Island fudge. I remember the feeling of it smoothly melting away in my mouth.

Hi Gwen,
Can you tell me a little about the smash cake? Size and price. Did you use chocolate coating or real chocolate? I have heard about them and am interested. Thanks Debra

Hi Gwen,
Nice to hear from you. this is my last week of internship at the wedding cake shop I told you about. I learned a lot and am eager to practice what I learned on my own. I am also getting back to making more chocolate confections which was put on hold while I was learning about wedding cakes.

I'll see your German education and raise you a German upbringing. Although, it has gotten me into trouble in the past, so I try to be more like my Dutch dad! Nice to have you as a friend. Your desserts look tempting!
