Most memorable chocolate experience:
Every time I sneaked a piece of chocolate as a girl, I erupted in rash. My mother called my skin a barometer and forbade me even a bite, except once every few years. Some years passed and for my ninth birthday, she ordered a seven-layer white cake from an Italian bakery in the city where we lived. It had a whipped cream frosting and was decorated with a spray of rosettes along the sides. I was certain a mistake had been made however as there were triangles of dark chocolate arranged in a fan pattern on the top. Imagine my delight when she said no mistake had been made, that I was permitted one or two blades.
My favorite chocolate is:

I don't know of a museum of taste in the US, but there is one in Italy - Museo del Gusto in Frossasco, near Turin.

There are a bunch of chocolate museums around the world (just do a google search on "chocolate museum" - with the quotes). I am in the midst of developing a database application for a couple of the other ideas that have been suggested here so I think that adding that into the mix would be a great idea (so I will).

I applaud your quite fabulous collection of wrappers. One day, you'll have to consider where to leave them. There must be a museum of sweets somewhere...

Welcome to The Chocolate Life. I love your birthday cake story. Have you visited on of J-P Hevin's shops in Paris? I've been to the one near the Ecole Militaire metro stop. The design was fabulous (and the chocolate's not bad, either!).
