Buying property in Jamaica that had mature cacao trees (they call them cocoa or chocolate trees in Jamaica) growing on it and learning how chocolate is made there -- from harvesting the pods, fermenting, drying and then using a mortar and pestle to create chocolate balls for making chocolate tea. I'm learning that selling raw cocoa is not profitable for small farmers so I'd like to learn how to make chocolate and chocolate confections to see if we can set up a factory and help the other local farmers too.
