I am a boutique cake designer in Brisbane Aust. who works soley in chocolate. Was designing a wedding cake for a florist who was having foliage so I used large leaf moulds to cascade & wrap around 3 tiers of cakes with collars 30cm tall, with one large chocolate flower on the front. The client just let me create what ever I wanted,price wasnt an issue, it was an amazing cake all done in white chocolate. It was difficult to bend & twist the moulds into the shapes I needed without them breaking. It wasnt the largest cake I have made standing at 130cm in height (the tallest one I have done was over 10 tiers) however it would have to be one of the best art pieces I have created. I was free to create .Seeing the look on the brides face when she saw it for the first time with no idea of what I was going to do was a magic moment. She had the utmost faith in me & trusted that I would create something outstanding.. that wedding gave me a lot of joy!!
