I am teaching myself to temper chocolate right now and I'm wondering the best way to hold the temperature of the chocolate. I'm using a double boiler and using both milk and dark chocolate. I…Continue

rental kitchen, startup costs

I became legit, got a kitchen and started doing some farmer's markets however the kitchen rental is $25/hour, that on top of ingredients and theoretically paying myself there is no way I can make enough and have reasonable prices without having crazy high prices. A cottage license would have been a beter way to go, but I have a dog. A friend of mine in DC (I'm in Oregon) said the way she and a lot of other people get started is to rent a kitchen for a few hours a month but do most of the making…See More

Farmer's Market customer interaction question

Hi everybody! Today was my second farmer's market. Last weekend was my first and I did not have samples. Today I had samples of the bars that I make and I have my standard bars that are $4, and then I have a fancy bar which I had cut up some and made samples but ran out. Then this woman came up and mind you, I had samples of everything else out on the table, and she told me "you should have more samples". I told her I only had 3 bars left and didn't want to cut one up for samples. Meanwhile I'm…See More

Starting slowly - Picked up a free granite slab this morning!

I am interested in starting my own chocolate company. While I am getting the finances together and researching business requirements etc. I am teaching myself how to make chocolates more precisely (and more important, to get excellent results every time!)

I was looking online at marble slabs and I found one for about $50 with no guarantees for the piece arriving whole to my doorstep. Then I checked my local Home Depot and Lowe's and i couldn't buy a single tile 18" x 18" but I…
