- Most memorable chocolate experience:
- Seeing how the bright yellow/orange cocoa pods grow on the trees in Bali, Indonesia this past August at my friend's plantation there. Then learning how the beans are removed, fermented and graded, packed and consolidated from small farms and shipped to points far away.

- Mozart dark with marzipan filling, my choc buttercream made with Guittard semisweet
