What is chocolate anyway? Is it the bean, the fruit on the outside of the bean with the bean, is it a roasted product, or powdered raw product, I get a gallon of the best cacao juice from every 15 gallons of beans, makes great wine and vinager. Is it the theobrominethat makes us feel better? Is it the sweetners, or the pure ground melanged bean with no cacao butter removed? I guess every time we make a it into any product I am amazed that the day before or the week before we picked it off our tree here in Panama, had a Nobe Indian roast it, and grind into nibs then turn it into food.

I like raw ground powder from dehydrated beans, or a dark roast smooth sweetened with cacao juice, 100% cacao, very rare.
