If your budget is $100/lb for chocolate you can afford the world's best brand names. I don't know of any couverture chocolate - even the most expensive boutique brand - that cannot be had for $100/lb.

Sorry for the confussion, I meant that the total cost per Pound did need to be under $100 , so If the wholesale bulk price was say $53.00 for 25-50 lbs of Guittard lets say then that would work.
We are doing molds that are 1 oz appox.…"

Sorry I have not posted in while , but life happens but thanks for letting me know about the page,I have just changed it agian so hope this works better. The interest in my Collectible Profiles "Profiles in Chocolates is being looked at now with the Lincoln Bicentennial next year and so it helps to have interested people .

Well today April 4th ,2008 I have decided to join the blog by sharing with The Chocolate Life members my story of taking historical figures from American History/culture and transforming these historical people famous faces(profiles) into what I call "Profiles in Chocolate"

Welcome to The Chocolate Life. Were you in Europe when you had these experiences or somewhere else? I have always found that one of the reasons chocolate tastes better in Paris is because I am in Paris.
