Lightly used polycarbonate molds

I have about 30 lightly used polycarbonate molds for sale. They range in price from $15-20 and a couple double sided and small round or square magnetic molds for $30. Shipping is extra but 4 or 5 molds fit into a $13-15 rate box. Can only post 3 pics here - an adorable double sided bear that just doesn't sell in the tropics, small square magnetic mold ( I believe I have 2 round and 2 square) and 2 rounded coffee bean molds. Many more- some small swirly rounds, citrus slices, a large…See More

Cacao Nibs and Pathogen Risk

Posted on September 4, 2011 at 12:07am 6 Comments

I have had customers asking me for cacao nibs and roasted  and raw cacao beans but have been reluctant to stock these items due to salmonella or other pathogen risk. After seeing cacao beans being fermented and dried in numerous countries I question the safety of these products. Dirt, bugs, drying on asphalt roads etc..I question from all but the most sophisticated winnowing operations to remove the husk. Am I overreacting to the risk ? Does the roasting process kill these pathogens? Is anyone… Continue

New Chocolate Boutique Opening

Posted on April 21, 2011 at 4:34am 3 Comments

My newest Sweet Paradise Chocolatier chocolate boutique is  soft opening May 1st at the Wailea Gateway Center in Wailea, Maui.  The official "Grand Opening" will be June 16th. This has been a 9 month process to get permits and open a store here and it doesn't even have a kitchen! Talk about island time. The store features my own truffle/confection collection focused on Tropical flavors but also bars from various Hawaii chocolate-makers- Original Hawaiian, Malie Kai, Waialua Estate, Madre…

Sweet Paradise is Opening a New Store

Posted on March 13, 2009 at 4:00am 2 Comments

I am pleased to announce that my chocolate company, Sweet Paradise Chocolatier will be opening this summer at the Kings Shops at the Waikoloa Beach Resort. My manufacturing kitchen will also move to Waimea, also on the Big Island. The Kailua location will remain and expand to a dessert cafe in addition to chocolates. Despite the economy I am looking forward to this move and direction into the resort world.

The little shop is only 300 sf and will also serve gelato and a unique variety of… Continue

Valentines Recovery

Posted on February 17, 2009 at 3:07am 1 Comment

Don't know about anyone else but I am in post-Valentines recovery!! What a maddening holiday. I watched thousands of chocolates disappear in what seemed like a 3 day feeding frenzy. The reward is that I get to spend a few days At the Craters Edge in my tree fern forest/B&B in Volcano, Hawaii soaking in the hot tub and watching the first fiddleheads start to wake up from "winter" . Different groups of orchids are blooming now, I don't know the names of all of them but at least 6 varieties are… Continue

Hi Melanie,  sorry for the delay on contacting you.  I've spent the last few days out of commission with the flu.  Seem to be doing much better now.

Thursday is the only bad day for me to meet up.  I fly out on Monday around noon. When will be best for you to meet up?  I'm staying in Kehei, so getting to you shouldn't be much of a problem.

Thank you,

Erin

Hi Melanie,

Thanks for the offer to give me a source for Valrhona. Try as I might I can't find a way to email you. Usually there is an email link attached to the member profile. Sorry, I can't find it.

Be that as it may, I used to buy the Valrhona from Heinz Weiler at Y. Hata. They stopped handling it a couple months ago. I know Rimfire on Maui has it, but I haven't opened an account with them yet.

If you have a source here on Oahu, I'd really appreciate you passing that info on.

Aloha,

Rich Bockhaus

Hi Melanie, thanks for your message! Both my partner and I would love to come to Hawaii to visit you and bring you green chili. Where in NM did you live? Do you know Nat? He is an ethnobotonist with the UofH and grows his own cacao and makes chocolate as well. Do you need a pastry chef or would you be willing to host chocolate history lectures? Contact me sometime. :-) Mark

Hi Melanie,
I can't remember if I told you that my real name is "Lowe". I was in your Kailua Sweet Paradise store in Nov 08 and Dec 08 when I was visiting from NC. It was great to taste Hawaiian chocolate! I wish I could get back there again soon, but don't know when that might be.
