Welcome to The Chocolate Life. You know, I've lived in the NY area for over 20 years and have been doing stuff with chocolate for more than a decade, and only met Rose for the first time last fall at my friend, Jean-Francois Bonnet's wedding. He used to be the exec-PC at Restaurant Daniel and is now at Tumbador, a private-label chocolate manufacturer in Brooklyn.
I went to Williamsburg a couple of years ago and had dinner at Trellis. I was not blown away - but Marcel was not in the kitchen that night and maybe that's why. Do tell more about classes with Rose, won't you?
