Welcome to The Chocolate Life. Have you ever tried making caramelized bacon? You do it by making a dry rub with brown sugar and spices. I add cocoa powder and cayenne powder to mine. You bake these in a rack in the oven until they are the desired texture, at least 20 minutes at 350. I use very thick-cut bacon so the outside is crispy/sweet/chocolatey/hot and the inside is chewy.
