Hi All,I am wondering if someone would be willing to share tips on roasting beans in a convection oven? Mostly wondering about a baseline temperature to start with, and do you start high for a period then lower or stick with one temperature throughout? I know there will be different profiles for different beans, but would love to know a good place to start and how to know when you've got it right.I truly appreciate your help and expertise!NicholeSee More

Most memorable chocolate experience:
I took a bean to bar chocolate making class through Ecole Chocolat, and a large part of the class was tasting chocolate from different regions and learning about flavor profiles, the terrior, of each cocoa growing region. Of all the chocolates I tasted, the bars from Rogue Chocolatier really changed my perception of chocolate. He has a remarkable ability to take you through each and every flavor a cocoa bean has to offer, it is truly mindblowing. My view of chocolate has never been the same.
My favorite chocolate is:
Rogue Chocolatier Sambirano
