I took a bean to bar chocolate making class through Ecole Chocolat, and a large part of the class was tasting chocolate from different regions and learning about flavor profiles, the terrior, of each cocoa growing region. Of all the chocolates I tasted, the bars from Rogue Chocolatier really changed my perception of chocolate. He has a remarkable ability to take you through each and every flavor a cocoa bean has to offer, it is truly mindblowing. My view of chocolate has never been the same.
