"I am looking into the same issue.  There are screens or filters that are available for grease traps.  I'm not convinced that most of the chocolate will float to the surface in a typical grease trap.  I am meeting with our city…"

"Hello. This appears to be the best break through in technology for craft chocolate makers.  The price point is reasonable when calculated on a cost/kg processed.  It is no different than a Cocoatown as their prices have rapidly increased -…"

"Hi Paul, I've had similar issues with CocoaTown's 65-A (8lb) grinder. I used a food grade epoxy to glue the plastic piece at the center of the bottom of the drum to the stone drum with great success. Here's a link to the product…"

Glue/Sealant for Cocoatown Large Grinders

Hello.I have a used ICGC-C-40 wet grinder that now leaks from the stainless bowl to granite bottom seal.  Any recommendations on a sealant/glue to reseal the bowl?  I tried GE Silicone II from the outside but it did not seal well.  I think I am going to have to seal the bowl from the inside - which is a food contact surface.Thank-you,Paul PictonSee More

Paul Picton replied to Karam's discussion What is the production cost per bar of Mast Brothers chocolate?
"As Sebastian pointed out, this kind of financial information is highly guarded.  You should, however, be able to make a generic analysis.  It should be pointed out that Mast Bros operation is completely different from Torres - small vs.…"

"This is exactly what I had in mind.  I am buying a used Henny Penny oven tomorrow.  It is a 220V, 3 phase oven so I will not be able to use it until I move into my factory space.  I will work on the drum next week."

"Looks good Alison, I think our rotisseries may be identical. Do you not have any baffles to stir the beans up a little as the drum rotates? To extract the beans do you put a tray in to catch them and then pull the hatch open? I wondered about…"
