"Hey Renee, What ever came about from your tests on the bags?  Also, do you have any info on good box companies you could tell me?"

"Dave, Uline/papermart has fairly inexpensive heat sealers that work on all sorts of bags.  I've been using the 6" one for 6 years and it's still going strong."

"Yes and no.  I'm storing them all together in the zip-lock sealed bag, so this freshness test is relative to themselves.  Usually, I store my finished bars in a sealable plastic tub so those are stored somewhat out of ambient air…"

"I have some samples of the ClearBags, but haven't done a test to compare to my foil wrapping yet. Wouldn't the zip-lock seal in some freshness and skew your results?"

"Thanks Ben.  Yeah...maybe I'll keep an eye out for an inexpensive wine fridge.  My finished chocolate isn't in as stable of an environment that it could be in.  Have you tried the ClearBags resealable bag that I…"

"Hi Dave. Sorry, I meant to reply to this thread a while ago... Currently, I just store my chocolate on a shelf in my chocolate workshop. The workshop has its own a/c and dehumidifier, so the environment stays pretty stable. I always thought a wine…"

"No I haven't mentioned how I store my chocolate.  It's very sophisticated.  After I foil wrap, clear bag, and label the bars I put them in a sealable plastic tub.  That sits on the bar between the kitchen counter and the…"

"Hi Dave, I haven't done any real scientific tests, but have had some of my bars in foil that were probably 6 months old or so. I've had other makers' bars that were significantly older than that, too. All seemed ok, except a bar or…"

"Hey Ben, My observations have been that chocolate in the flag seal bags seem to lose their freshness over the course of a month.  By say, two months, the bars are starting to get that oxidation haze/cast to them and a "drying-out"…"

Most memorable chocolate experience:
Harvesting cacao in Costa Rica on a small plantation. Using a machete to harvest and crack open the pods; stripping the pods of fruit with my hands; and carrying the cacao fruit down the mountain.
My favorite chocolate is:
Askinosie Dark Milk + Sea Salt (made with goat milk!)

How exciting!  Charlottesville should be a good town to support a bean to bar chocolate maker.  I am starting to do some consulting for artisan craft b2b chocolate makers, so maybe we could connect sometime when I go to Charlottesville.  Do you have any ideas about when you are going to start production?

P.S.- Have you ever seen my ChocoFiles reviews at my ChocoFiles website?
