For me, one of my favorites, and she has quite an inspirational story, is Katrina Markoff, founder of Vosges. She was featured on girl crush. http://girlcrushoftheday.blogspot.com/2010/02/katrina-markoff.html

Forgot to point out the truffles in my picture are pierced with Jamaican almonds which are a little different from what we are used to in the states. I think they are also called Indian almonds.

Chocolates and Confections is also one of my go-to reference books. Wonderful guide and easy to follow. Another one is Pierre Herme's Chocolate Desserts.

I was going to suggest the Chocolates and Confections book as well. It is very well written, the pictures are wonderful and the recipes are easy to follow.
