Nowadays, I have memorable chocolate experiences every day. Recent highlights range from being a guest for a day at Geert Vercruysse's wonderful chocolaterie in Kortrijk, to tasting experiences with friends and even strangers. But I think I like my own private tastings best. I put chunks of different bars in several marked bags and then pick some out, and taste them blindfolded! This is the essence of tasting for me, unhindered by any prejudices about brands or ingredients and whatnot.
