"In Costa Rica the height of the rainy season is October to December. I'm not aware of any harvesting or drying of anything during this time of year. Most Tico's just hunker down during those months and hope they don't get washed away."

Most memorable chocolate experience:
A trip we took to Equcador introduced me to a small Chocolate maker about 30 miles out of Quito. The bean to bar chocolate was made from the Real Nacional bean not those anything goes beans of the arribia name. These have never been cross breed with any other cacao.
Anyway the chocolate was stupendous, We are going to Ecuador in Dec and will be hunting down more of the stuff for sure.
My favorite chocolate is:
So far this dark chocolate made with the Nacional bean, next would be a very reddish bar of criollo bean chocolate.
